Biling celebrates the flavours of Sri Lanka through a contemporary lens. Our name comes from the Biling tree, the tart fruit many of us grew up eating. Whether it be from a tree that stood tall in their homes or in my case, from the tree down the road from my Tuition teachers house. These days, Biling trees though rare, are still found in peoples homes throughout the Island, quietly holding memories of the generations who lived there.
Our Menu is an ode to the kitchens that raised me. Recipes that have been passed down through generations, recreated and reimagined for today. It brings together my Father’s Sinhalese roots and my Mother’s Burgher heritage, cultures whose cooking styles may differ in flavour but share the same spirit; food made with love, care, and pride.
